Lemon sorbet

The basic italien style lemon sorbet which can be found all over the internet. The favorite of my youngest kid and father-in-law.

Ingredients

  • 250g caster sugar
  • 400ml water
  • 200ml freshly squeezed lemon juice. I normally just use 3 lemons.
  • 1 egg white

Method

  • Mix the sugar, water and lemon juice together in a pan and heat it up while stirring until the sugar has dissolved. Set aside to cool completely.
  • Whip the egg white and carefully fold the egg white into the mixture, stirring well.
  • Place into the ice cream machine until firm (around 30min), then put into freezer for a couple of hours.

Alternatives

  • Add a couple of drops of food color additive, like green, red or blue, for the extra surprise.

A couple of years ago we had a birthday dinner party coming up and the guest of honor, really wanted a green sorbet. My guess is that he either had the idea from a pistachio ice cream I had done for his brother, or well, just wanted to make something in his favorite color.
